The cherries are delivered by more than 850 local smallholder producers to Fugi Washing Station, operated by Emmanuel Rusatira and Baho Coffee. Farms in the surrounding mountains sit between approximately 1,550 and 1,835 meters above sea level, where coffee is predominantly cultivated on a small scale.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAt Fugi, ripe cherries are carefully sorted before undergoing anaerobic fermentation while still intact. The cherries are then pulped, followed by aerobic fermentation, washing, and outdoor drying.
