Anaerobic Natural Process Maracaturra produced in Nicaragua by Isacio J. Albir Vilchez.
Rich and expressive, with a deep cocoa sweetness complemented by ripe strawberry, vibrant passion fruit, and juicy watermelon. Delicate notes of rose and a fresh mint character add aromatic complexity, creating a layered cup with a distinctly tropical and fruit-forward profile.
This coffee comes from Agua Sarca, a 69-hectare farm located in Dipilto, Nueva Segovia, northern Nicaragua. Situated at 1,410 meters above sea level, the farm is dedicated entirely to coffee production and cultivates seven different varieties across approximately 300,000 coffee trees.
Produced by Isacio J. Albir Vilchez, this lot is composed entirely of Maracaturra. Isacio has worked in coffee production for more than 30 years, combining his experience as a coffee grower with his background in agronomy.
After selective hand-picking, ripe cherries are sorted before undergoing anaerobic fermentation while still intact. The coffee is then dried outdoors using the Sleeping Bag technique, a controlled drying method that helps develop and preserve the coffee's intense fruit character.
The result is a complex and distinctive expression of Agua Sarca. Rich, juicy, and aromatic, combining cocoa and strawberry with tropical passion fruit and watermelon, lifted by delicate rose and fresh mint.
